In the center of the layout, six casks of balsamic vinegar from Modena are placed in a specific order known as a batteria by Emilian producers. Each cask contains a different type of wood, such as oak, chestnut, cherry, mulberry, and ash. The vinegar progresses down the line through travaso, gradually moving from larger to smaller containers over the years while absorbing tannins and aromas from each wood type. It is impossible to speed up any part of this process, which makes the batteria a clear expression of the restaurant’s philosophy for the dining area.
The location is positioned at the intersection of two busy streets in Villeray, and the interior extends to a length where keeping it as one open room would have felt exhausting. To avoid this, Mise à jour divided the floor into a series of separate atmospheres, so a visitor moves through different moods during a single trip. Circular banquettes line the main dining area, surrounding a central bar with twelve seats for counter guests. Behind that bar, the team works in full view, next to the Pasta Box, a dedicated counter where chefs roll and cut fresh pasta by hand.
Twelve chairs are positioned opposite a functioning bar, drawing inspiration from the Italian banco layout where transactions occur at a single level and guests observe the preparation. The establishment began as a wine shop and later incorporated food, which clarifies why Mise à jour emphasizes bar and sommelier knowledge rather than framing either as a separate offering.
Strongly patterned natural stone contrasts with dark wood varieties and gentle, touchable surfaces, allowing the stone to provide visual interest and motion while the wood stabilizes the room’s temperature. The ceramic flooring references the checkerboard tiles found in classic trattorias, a design that originally arrived there as affordable cement tile and later became a simple symbol of that style. A blue tone is present in the custom table settings and in the menu branding, bringing a cooling effect to a color scheme built mainly from warm hues.
